    I know of a couple ways to make red velvet cake. If they used a chocolate base, the cake should turn out a very deep red, and yes, this is done by adding a lot of red coloring. However, red velvet cake should never be dry...it's a rich and heavy cake. The ingredients that go into the cake should have made it very moist. In order for it to turn out dry, they must of messed up the recipe or left the cake sitting out for a couple days uncovered.
